 Abstract


The relatively high level of beef consumption is supported by the development of culinary tourism and hotels, making the demand for beef in Bogor City continue to increase. On the other hand, Bogor is not a beef-producing area, so the fulfillment of beef needs must be supplied from other regions. The research objectives include identifying the supply chain of beef, and designing a dynamic model of the supply chain to predict the availability and demand for beef in Bogor City. The study uses secondary and primary data. The method use is dynamic system model with simulations using Powersim Software. The results of the analysis showed that there are 13 patterns of beef distribution chain channels in the City of Bogor involving 3 groups of actors, namely the main supplier, the intermediate and the user. The dynamic system models of beef in Bogor City are able to represent the real world condition of beef supply. The validity test and verification of the models carried out showed that the dynamic model that was arranged was in accordance between the conceptual model and the mathematical model, and that the structures was correct which was marked by the absence of a structural error.
